I just love a good cake and warming winter spices make them a must have for cold dark evenings, this spiced apple cake is one I have had for years but recently adapted. I hope you enjoy it as much as we do!
Butter and flour for greasing and dusting cake pan
750g Bramley Apples
1 tbsp fresh orange juice
250g self raising flour
100g soft light brown sugar
2 tbsp demerera sugar
1 tsp baking powder
1 tsp ground cinnamon
1 tsp mixed spice
1/4 tsp ground cardamom
2 large eggs
200ml whole skimmed milk
100ml sunflower oil
Icing sugar for dusting.
How to make
Preheat the Oven to 190 degrees Centigrade. Grease and flour a 23cm cake tin, you can use a loaf tin for this too if you wish.
Peel and Grate the Bramley apples removing the cores, put them in a bowl and cover in the orange juice
Mix the flour, baking powder and spices in a bowl. In a separate bowl mix whisk the eggs and light brown sugar until they are combined. Gently combine the wet ingredients with the dry, folding in until combined. Fold in the grated bramley apple and transfer the whole mix to your cake/ loaf tin.
Sprinkle the demerera sugar on top and bake in the centre of the pre-heated oven for around 1 hour, until it is golden and risen (If in a loaf tin it may take a little longer). Test with a tootchpick! If it comes out clean its ready.
Leave to cool in the tin for thirty minutes, before turning out onto a wire rack to cool completely.
Dust with icing sugar to finish and then tuck in!
These make great little cupcakes too! with a slice of apple on the top as they go in the oven!
