So I’ve really wanted to take up foraging for a while and thought why not start with the humble dandelion? The past few years on nature walks we have picked wild blackberries out and about so I wanted to really give it a good go this year.
I have so many growing in my garden this time of year it makes sense to pick them and use them in seasonal salads.
It has been a challenge getting my children to eat something they are used to seeing pop up in the garden as a ‘weed’, we enjoyed the leaves and heads in a salad last week and this week I thought I would be a bit tricky and deep fry them in a spiced batter.
I threw some garlic powder, sumac, a little paprika, salt and pepper in a bowl with flour and water and whisked to a batter. I dipped them and deep fried them in olive oil until they were crispy, drizzling with a little honey to serve.
I actually thought they were really tasty as did all but one of the children! I am enjoying introducing them to foraging. It’s definitely a life skill I think everyone should have, to make the most of what the world has to offer. Do you forage?
